Wonderful. Pappa Geno's does a good job with that too. But -- there's enough black pepper to float a battleship! And there's nothing authentic about that! None of the original Philly cheesesteak joints empty half a can of black pepper onto their meat. Though I enjoy black pepper, my crew (including my Yankee wife) had some issues. Yo, Pappa Geno's!
